Feta and Herbs Muffins




Ingredients

• 125 g flour
• 1 teaspoon baking powder
• 1 clove of garlic
1 egg
• 125 g yoghurt
• 1 teaspoon salt
• black pepper
• 35 ml sunflower oil
• 1 large handful of fresh herbs (I used parsley and mint, could also use basil, thyme, etc.)
• 100g feta cheese


Instructions
1. Peel the garlic and chop finely. Wash herbs, dry with kitchen towel and chop finely.   2. Mix beaten egg, yoghurt, oil, salt, pepper, garlic and herbs together. 
3. Mix flour and baking powder in a separate bowl. Cut feta cheese, cut into small pieces and mix into flour. 
4. Combine wet and dry ingredients in one bowl. Divide the batter into the greased muffin tins. 
5. Bake in a preheated oven at 180°C for about 25 minutes. Serve warm or cold.
