Ingredients
1 cup white flour
1/2 tsp baking soda
pinch of salt
145 g butter
2/3 cup light brown sugar
1 large egg
1 tsp vanilla essence
1 cup porridge oats
zest of 1 orange
2-3 tbsp freshly squeezed orange juice
100g walnuts, roughly ground or finely chopped
Instructions
2. Preheat the oven to 180C.
3. Mix flour, cinnamon, soda and salt in a bowl. Leave aside.
4. Beat the butter and sugar together until light and fluffy. Add the egg, while still mixing. Add vanilla and mix. Add oats, orange zest, orange juice and the dry ingredients and mix thoroughly.
5. Line baking sheet with baking paper.
6. Spoon the mixture onto the baking sheet.
7. Bake for about 15 minutes, or until golden brown. Carefully transfer the cookies to a wire rack to cool.
